Dinner time can get crazy, especially with the school year starting back up. Everything seems to hit super speed after the bus lets off.
Homework. Paperwork. Books. Kids. Everything flying around at lightening speed.
And before you know it, everyone is asking for dinner.
I honestly think the thing I hate most about cooking is cleaning up the mess.
It’s no secret that I don’t enjoy cooking. I enjoy the idea of it all – I have a whole Pinterest board full of awesome homemade recipes. But that’s where they stay: online, locked up, and away from messing up my kitchen.
After the whirlwind hits my house, the last thing I want to do is clean the kitchen –Â again.
So, when I can find a dinner that has a short prep time AND doesn’t have many messy steps, it’s a winner in this house.
Add all that, PLUS, it’s picky-eaters approved:Â hellooo – this one is a diamond!
It seriously has six steps and only dirties up… wait for it…
ONE PAN
That’s it. You have an entire dinner made in one pan.
Okay, let’s be honest, I still dread cleaning that pan – but if it’s only one pan, I think I can manage.
I normally make biscuits to go with this meal, but, if you are feeling super lazy (like me most days) you don’t even have to do that.
Literally, pour it all into one pan, bake, and eat.
Dinner — Done.Â
Plus, if you are still teetering on whether this meal is actually “all that” let me throw in the fact that my house is made up of nothing but picky eaters (myself included), and everyone goes back for seconds on this one!
 Every veggie gets devoured, the last pieces of chicken is fought for, and the potatoes hardly make it out of the oven before they are gone.
There are NEVER leftovers after this meal. <– that means it’s a SUPER win in our house!!
Okay, so enough rambling and on to this miracle recipe.

- 3 Chicken Breasts cut in half
- 4 medium Red Potatoes
- 1 can Green Beans or Broccoli
- 1/2 stick butter melted
- 1 packet Italian Dressing Mix
Ingredients

- Preheat the oven to 350 degrees
- Cut the chicken breast in half and potatoes into small chunks
- Spray the bottom of a 13x9 pan
- Place the chicken in the middle, potatoes on one side, and green beans on the other
- Top with packet of Italian dressing mix (some people use half, I use it all) and pour the melted butter over top
- Cover with aluminum foil and bake for an hour
Now you're done! That's it! Place it in the oven and admire your still clean kitchen (;
The chicken ends up so nice a juicy, the beans are full of flavor, and the potatoes are cooked to perfection.
If I didn't just make this meal two nights ago, I would be going to pop this bad boy in the oven now... I'm really craving some after this post!
