Well, folks, I am back at it again – slowly, but surely.

LB is more time consuming than I imagined… and by time consuming, I mean I just can’t put her down – her snuggles are too good (;

With all that extra snuggle time, my day seems to fly by and before I know it the time all mother’s dread draws near…

Dinner Time!

And we already know that I am the true definition of a lazy chef.

That’s why I wanted to share with you another one of my favorite simple meals.

It’s quick, easy, and delicious!

Plus, the name totally gives away just how simple it is:

Forgotten Chicken

And just like the name says, you throw it all together and then “forget” about it. The meal cooks itself! It’s like a crockpot meal, but for the oven!

Funny side note: one night, the hubs texted me on his way home and asked what was for dinner. Mind you, it was really his turn to cook that night. Yes, I make my husband cook – it’s one night out of the week, when he stays home and I take Ry to ballet (;  But, I felt generous that night and decided to start this bad boy hours ahead. So, when he asked I replied, “forgotten chicken.” He was clueless. Secretly hoping I had planned something for dinner, his bubble was busted because he thought I meant that I had a dinner planned but had “forgotten” it — which is not at all a stretch for me and my ever fading memory — lol

 

aaaaaaanywho, now that I have bored you with my ramblings, I am sure you’d like to see what all the fuss is about, right? (;

This meal is super easy, so don’t worry about messing it up. If you stick it in the oven and literally forget about it, don’t worry. It’s hard to ruin, so I’m sure it’ll be fine. As long as you don’t forget it for days… pretty sure it’s not that fool proof…

Instructions
  1. Preheat oven to 275 (to cook for three or so hours) or 375 (to cook for 1-1.5 hours)
  2. Mix together "cream of" soups, 1 can of water, and minute rice
  3. Pour into a buttered casserole dish.
  4. Lay chicken on top of rice mixture and sprinkle with onion soup mix
  5. COVER WITH TIN FOIL (very important!)
  6. Place in oven and... fa-get about it (insert best Italian voice here lol... okay, I'm done.)
