Okay, I know I say it about all my recipe posts — but this one really is one of my FAVORITES! A simple crowd pleaser that everyone loves: Chicken Taquitos.
Our Hulk Family Approves this Meal
Which should mean lot coming from, not only picky children, but a picky husband. He doesn’t complain about dinners (not too often anyways), but I can always tell when he likes something and when he doesn’t. And on the off chance that he really likes something, he will specifically ask for it to be made– this does not happen often folks, so take my word for it: this is a once in a lifetime easy, crowd pleasing meal.
Plus, I always have to make sure that I make plenty because my kids go crazy for seconds, which is a complete RARE occurrence in this household!
And I actually don’t mind making it.
SN: I’m what they would probably classify as a “lazy chef.” I search for the quick and simple way out of cooking any meal! If it can be thrown in a crock-pot or made with little effort, I’m all in!Â

- 1 can Swanson Premium Chicken Breast in Water, drained my husband hated this because it reminded him of tuna, so I buy the pre-cooked chicken strips and shred them with the blender
- 4 oz Cream Cheese, softened
- 1/8 cup Buffalo Sauce
- 1 cup Shredded Monterey Jack or Cheddar, whichever you have on hand
- 8-10 8-inch Flour Tortillas in the picture I only had the small tortilla shells, so it looks like I ended up with double
- 1 pinch Coarse Kosher Salt

- Preheat the oven to 350 degrees.
- In a bowl, combine the cream cheese and buffalo sauce. Mix well.
- Stir in the Monterey Jack cheese and chicken. Mix well.
- Place 2-3 tablespoons of mixture down the center of each tortilla and roll up. (If needed, microwave the tortillas for about 30 seconds to make them soft enough to roll - I've never had this problem)
- Place on baking sheet.
- Spray tortillas with cooking spray and sprinkle (lightly) with salt.
- Bake for 17-20 minutes , or until golden brown. (I normally bake for 17 minutes and then put the oven on broil for the last 3 minutes to give the tortillas a crispy, crunchy texture)
And you are done!!
